Bread Care Tips
- Enjoy within 2-3 days for the freshest bread.
- Refrigeration will dry the bread out and is not recommended.
- Store on counter in paper bag or bread box.
- Refresh stale bread by sprinkling with water and baking for 10 minutes at 375º.
- Freeze sourdough loaf in a sealed bag for up to six months.
- To refresh your frozen bread, thaw then bake at 375º for approximately 10-15 minutes, or sliced in a toaster oven.

About Einkorn Flour
At The Sourdough Lodge, I use a blend of organic Einkorn all-purpose, organic Einkorn whole grain and organic unbleached all-purpose flours. Einkorn is an ancient, non-hybridized wheat that has remained genetically unchanged for thousands of years. While it does contain gluten, its unique structure differs from modern wheat, making it easier to digest for some (though not suitable for those with celiac disease). Rich in protein, antioxidants, and essential minerals like iron, zinc, and magnesium, Einkorn flour adds both nutrition and depth of flavor to every loaf.
